1/2 lb cold pasta, cooked according to package directions
1/2 container cherry or grape tomatoes, sliced in half
1/2 bunch cold asparagus, cut into bite sized pieces and blanched
1 bunch romaine lettuce, chopped
Leaves from 1 stem of fresh basil, minced
1/2 container bocconcini mozzarella (cherry size), sliced in half
2 gloves garlic, minced
1/3 cup creamy Ceasar dressing
1 cup croutons
In a large bowl mix all ingredients except dressing and croutons. Add dressing and stir to coat. Garnish with croutons.
Makes four, 8.5 ounce servings of 413 calories each.
